Last week, I took a trip to Yosemite National Park for the kickoff session of The Ahwahnee's annual Chefs' Holidays. The event ended with a big blowout dinner, but I walked away with tons of tips. Chef Matt Bolton, who runs the kitchen at Pacific's Edge restaurant in Carmel's Highlands Inn, showed the audience how to confit a duck leg to make pâté-like rillette.

Around December, so much focus gets put on edible gifts and Christmas cookies that it can be easy to forget about the star of the holiday meal. If you want to impress without going through too much trouble, don't discount duck breast: it has all the exotic cachet of a game bird, without any of the fuss.
Regardless of how little you know about duck, you can't go wrong with its à l'orange preparation; the acidity of a sweet-tart orange glaze cuts through the fowl's robust flavor.

In an episode of Sex and the City, Trey's mother Bunny MacDougal festoons his Park Avenue apartment with duck decoys and plaid curtains, in a begrudging attempt to wield control over her son; Charlotte was less than pleased. All in-law issues aside, if it were me, I'd opt out of the duck decoys regardless, unless I'd spray painted them in glossy white to be cheeky or ironic. How about you?

Last weekend, I met up with some friends at a nearby butcher shop. The place is known for quality meats, and on this particular morning the duck legs looked mighty tasty. So I picked up a pair of them and went home for a cooking adventure.

We refurbished one of the cutest vids around with a new soundtrack. Just when you think this interspecies BFF video couldn't get any cuter, a little girl wanders into the frame and bumps it into cute nirvana. Enjoy!
