Here are a few pictures of some of the things my husband and I ate in Finland on a recent trip to visit his family.
Karelian pie (karjalanpiirakka) - it is filled with a rice mixture.
The Karelian pies are normally served warm with egg butter but I prefer mine with egg salad (mayo instead of butter).

Anyone who aspires to a job as a Santa's helper can acquire them at a new Elf Academy in Rovaniemi, 2,600 km (1,600 miles) from the North Pole, which Finland claims as home to the "real" Santa Claus.
Christmas 2007 is in full swing as tourists seek Santa in the Arctic Circle but after the school opens next April, the 2,000 or so "elves" will be able to raise their game.

Mini ice age took hold of Europe in months
JUST months - that's how long it took for Europe to be engulfed by an ice age. The scenario, which comes straight out of Hollywood blockbuster The Day After Tomorrow, was revealed by the most precise record of the climate from palaeohistory ever generated.
Around 12,800 years ago the northern hemisphere was hit by the Younger Dryas mini ice age, or "Big Freeze".

HELSINKI, Finland -- Finns, who introduced a birch-tree sweetener for gum, have found that the habit of chewing sticky lumps dates back thousands of years. Last month, students in western Finland found a piece of Stone Age birch-bark tar, believed to have been used for chewing and to fix broken arrowheads or clay dishes, archaeologists said Monday.
"Most likely the lump was used as an antique kind of chewing gum," said Sami Viljamaa, an archaeologist who led the dig near Oulu, some 380 miles north of the capital, Helsinki.

LONDON (AP) -- Hundreds of people on any given day will die, develop the paralyzing Guillain-Barre syndrome or have spontaneous abortions, and that doesn't necessarily mean that their swine flu vaccination shot was to blame, a new study says.
As millions of people worldwide begin getting the new swine flu shot, public health officials are bracing for rumors about dangerous side effects linked to the vaccine.
To provide context, experts combed hospital databases and population samples in Britain, Canada, Finland, the United States and elsewhere to find daily baseline rates of commonly reported events like Guillain-Barre syndrome, sudden deaths, seizures and abortions.
